Paneer(cottage Cheese) is Nutritious and it is rich in proteins and calcium.Paneer  bhurji is prepared with crumbled cottage cheese in a onion-tomato sauce.It is delicious and  goes well with paratha.

 

Paneer Bhurji

Ingredients

  1. Paneer(crumbled) – 500 gms
  2. Onion – 2
  3. Tomato(chopped) – 1
  4. Green Chilly – 2
  5. Ginger-garlic paste –2 tsp
  6. Red Chilly powder – 1tsp
  7. Turmeric powder –1/2 tsp
  8. Cumin Powder – 1tsp
  9. Vegetable masala powder –1tsp
  10. Tomato Paste –1/4 cup
  11. Cream –1tbsp
  12. Sugar -1tsp
  13. Coriander leaves
  14. Capsicum (red) – to garnish

Preparation

  1. Heat oil in a pan.Saute chopped onions,chopped tomato,ginger-garlic paste and chopped green chilly.
  2. Add crumbled paneer and stir.Add red chilly powder,turmeric powder,cumin powder,veg.masala and salt.Mix well.
  3. Add water and tomato paste to it.Mix well.cover and cook paneer in sauce to absorb flavors.
  4. Gradually add cream,sugar and coriander leaves.
  5. Allow flavors to infuse for at least 15 minutes before serving.
  6. Garnish with diced red  capsicum.
  7. Serve with rice or roti.

Shahi means “Royal” and it is indeed royal to go with rotis. Paneer is usually a common ingredient in our menu, especially north indian dishes and I love the bites of it in any curry. Usually, when you prepare mutter paneer, it needs to be fried in advance, but for this recipe there is no need to do that. Adding milk and cashew nut paste enhances the taste and indeed one of those easy ones which can be prepared in no time.

Shahi paneer (2)

Ingredients

  1. Paneer (cut into cubes)- 250 gms
  2. Ghee – 3 tbsp
  3. Onion(chopped) – 2
  4. Ginger-garlic paste – 1tsp
  5. Tomato (medium,chopped) – 2
  6. Green chilly – 2
  7. Red chilly Powder –1/2 tsp
  8. Garam Masala – 1/2 tsp
  9. Milk –1/2 cup
  10. Cashew nuts – 5
  11. Cardamom –2
  12. Sugar – 1 tsp
  13. Salt
  14. Coriander leaves – to garnish

Shahi paneer 

Preparation

  1. Grind cashew nut and milk into a paste.
  2. Heat ghee in a pan. Saute cardamom,chopped onions,ginger-garlic paste and green chilly.
  3. Add chopped tomatoes, red chilly powder,garam masala powder and saute.once it separates from oil, add cashew nut – milk  paste to it.
  4. Add paneer cubes,salt  to it and boil to get a thick gravy.
  5. Finally add sugar to it and mix well.
  6. Garnish with coriander leaves. you can garnish with grated paneer also.
  7. Serve hot with rotis.

Today when I opened my refrigerator, all I could find was some capsicum and realized that it’s time again to refill it with fresh vegetables. Since I had to prepare something for the dinner and it was too late to go to market, I started thinking what I could make just using capsicum. Suddenly, I realized that I had bought some ready made paneer cubes couple of weeks ago which could be an excellent add-on to make a rich kadai paneer. Kadai Paneer is a typical Punjabi dish and it is normally prepared in a kadai. Adding capsicum and kasoori methi powder gives it a rich aroma and serves as a great combo with any type of Indian breads.

Kadai Paneer

Ingredients

  1. Paneer (cut into cubes) – 250gms
  2. Onion(chopped) –2
  3. Tomato (chopped) – 2
  4. Ginger-garlic Paste – 2 tsp
  5. Cumin seeds – 1/4 tsp
  6. Capsicum(bell Pepper) – 2
  7. Kashmiri Red chilly powder – 1 tsp
  8. Turmeric powder – 1/4 tsp
  9. Coriander Powder – 1 tsp
  10. Garam Masala Powder – 1 tsp
  11. Kasoori methi powder – 1tbsp
  12. Salt to taste
  13. Oil
  14. Coriander leaves – to garnish

Preparation

  1. Heat oil in a kadai. Add cumin and once it starts spluttering add ginger garlic paste and saute.
  2. Then add chopped onions and fry till light brown.Add turmeric powder,red chilly powder,coriander powder and saute well.
  3. Add chopped tomato and chopped capsicum and cover and cook for 2 minutes.once it start to separate from oil add paneer cubes, kasoori methi powder,garam masala powder,salt to it and mix.
  4. Add 1/4 cup of  water to it and cook till gravy is thick.
  5. Garnish with coriander leaves.
  6. serve with roti or Naan.
