Bean Curd or Tofu is prepared by coagulating soy milk and pressing the resulting curds into soft white blocks.It resembles Indian paneer in taste and looks.This chilly bean curd is spicy and yummy to serve with fried rice.

Chilli Bean Curd

Ingredients

  1. Bean Curd(firm) – 6 cubes
  2. Onion(chopped) –
  3. Garlic (chopped) – 2
  4. Chilly Sauce – 1 tbsp
  5. Tamarind Pulp – 2 tbsp
  6. Sugar –1tbsp
  7. Tomato(chopped) –3
  8. Spring onion –1 tsp
  9. Oil
  10. Salt
  11. Water –1/4 cup

For the Chilly Paste

  1. Dry Red Chilly – 4
  2. Garlic cloves – 5
  3. Shallots –
  4. water –1/2 cup

Preparation

  1. Mix tamarind pulp and water.Strain liquid and keep aside.
  2. Place ingredients for chilly paste in a blender and grind it.
  3. Cut bean curd into cubes and pat dry.
  4. Heat oil for frying and deep fry bean curd until golden brown.
  5. In the same pan leave about 3 tbsp of oil and reheat.Add chilly paste and fry until fragrant and oil separates.
  6. Add chopped onions and garlic and saute. Add tamarind pulp to it and cook on low flame for 10 minutes.
  7. Finally add fried bean curd,chilly sauce,chopped tomatoes,spring onion,salt and sugar.cook until bean curd has absorbed all the flavors.
  8. Serve with fried rice

Wish you all a happy and prosperous new year. I wish all your resolutions and dreams come true in this Chinese year of the tiger. So, I’m going to start off my first post of the year with a Chinese touch with some yummy spice :-)

We usually make Sāmbhar using okra, but I’m going to share a unique recipe using okra in a Chinese style.

Pepper_Okra

Ingredients

  1. Okra (Lady’s Finger) – 6
  2. Onion – 1
  3. Green Chilly – 1
  4. Garlic(Chopped) – 4
  5. Pepper Powder – 1 1/2 tsp
  6. Corn Flour – 2 tsp
  7. Maida (All purpose flour) – 1 tsp
  8. Egg – 1
  9. Oil
  10. Curry leaves

Pepper_Okra_(2)

Preparation

  1. Wash okra and pat dry with a tissue paper to remove stickiness
  2. Cut it into long pieces
  3. Mix 1 1/2 tsp of corn flour, Maida, egg, salt and 1 tsp of pepper powder
  4. Marinate okra pieces with the mix and keep aside for 30 minutes
  5. Dust marinated okra pieces with the remaining corn flour and fry till both sides are light brown
  6. Heat oil in a frying pan again and sauté chopped onion, garlic and green chilly.
  7. Add fried okra, 1/2 tsp pepper powder and stir well.
  8. Serve hot

Noodles are all time favorite of kids. For this reason, you don’t have to tell them about its nutritional facts. As  noodles contain lot of carbohydrates, it is good for kids to have it in their lunch box. Usually noodle packets have taste maker inside which contains ajinomotto and other artificial flavors which are usually considered unhealthy to consume. So as an alternative, you can create your own instant maker by using mixed vegetables or scrambled egg.  It tastes so good that even fuzzy eaters won’t even notice that they are consuming an healthy diet comprising of enough carbohydrates and proteins.

Vegetable Noodles

Ingredients

  1. Noodles – 1 cup
  2. Onion(chopped) – 1/2 cup
  3. Mushroom – 1/2 cup
  4. Cabbage(chopped)  – 1/2 cup
  5. Carrot(chopped) –1/4 cup
  6. French Beans(chopped) – 1/2 cup
  7. Green peas (boiled)– 1/4 cup
  8. Capsicum (chopped) 1/2 cup
  9. Chilly Sauce – 2 tsp
  10. Tomato Sauce – 1 tbsp
  11. Soy sauce – 2 tsp
  12. Vegetable Stock – 1/2 cup
  13. Coriander leaves
  14. Salt
  15. Oil

vegetable noodles (2)

 

Preparation

  1. Boil water with salt and once it starts boiling add noodles to it.
  2. Once noodles become (usually it  takes 1-2 minutes) soft,drain and rinse with cold water. Toss with 1 tbsp of oil to prevent stickiness.
  3. Heat oil in a frying pan (Wok).Add chopped onions to it and saute till light brown.
  4. Add chopped vegetables and vegetable stock to it.cover and cook till veggies are done.
  5. Toss Noodles once again and add it to the pan.
  6. Finally add chilly sauce,soy sauce, tomato sauce and mix well with noodles.
  7. Garnish with coriander leaves.
  8. Serve hot with Ketch up.
