School holidays are always fun for kids and we adults too can relax a bit during this time. My first one wanted to get some sweets and thought why not I try something at home. I looked around to prepare something quick and easy, and found a tin of condensed milk which I bought sometime ago to make Kheer. If you do not know what “Kheer” is then watch this video. This Indian sweet is exceptionally easy to make as it needs only 3 ingredients.

Coconut Laddoo

Ingredients

  1. Grated coconut – 4 cups
  2. Milkmaid – 1 tin
  3. Ghee – 1 1/2 tbsp

Preparation

  1. Keep aside 50 gms of desiccated coconut .
  2. Preferably, use a heavy bottomed pan and heat it well. Add remaining coconut and milkmaid and stir well on low flame for 5 minutes.
  3. When  it starts to separate from the sides of the pan, turn off the heat and let it cool.
  4. Once it is cool, grease your palms with little ghee and make balls.
  5. Finally roll the laddoos in desiccated coconut spread on a plate.
  6. Store yummy coconut laddoos in air tight containers.

banana cheese halwa (2)

 

 

Ingredients

  1. kerala Banana (ripe) -  2
  2. Cheese -  2tbsp
  3. Sugar  – 2 tbsp
  4. Cardamom powder -  1 tsp
  5. Ghee  – 1 tbsp
  6. Almonds (fried in ghee)  -  2

Preparation

  1. Boil bananas and mash well using spoon.
  2. Heat a pan. add cheese, sugar and mashed banana and stir fry till mix turns brown.
  3. Add cardamom powder, 1 tbsp ghee to it and mix.stir on low flame for 5 minutes.
  4. Transfer the banana mix into a ghee greased plate.
  5. Garnish with fried almonds.
  6. Once it is cool cut into desired shapes

apple payasam

Ingredients

  1. Apple – 1
  2. Sugar – 3 tbsp
  3. Water- 1/2 cup
  4. Milk – 1/2 cup
  5. Cardamom powder – 1/2 tsp
  6. Saffron- 2 strands
  7. Almond( chopped) – 2

Preparation

  1. Peel and grate apple. In a pan, mix apple with sugar and water and cook till apples are well cooked.
  2. Boil milk in another pan and reduce it to half.Let it cool.
  3. Mix well with the cooked apple mix. (otherwise milk will curdle if cooked with apple)
  4. Add cardamom powder and mix well.
  5. Garnish with chopped almonds and saffron strands.
