This is Chinese style of preparing egg by making omelette first and then frying in the batter and saute in a spicy sauce.This spicy dish goes great with fried rice.

Chilly Egg (2)

Ingredients

To make 2 Omelettes:

  1. Egg – 5
  2. Pepper powder – 1 tsp
  3. Oil
  4. Salt

For Making Batter

  1. Corn flour –3 tbsp
  2. All purpose flour/Maida – 2 tbsp.
  3. Pepper powder – 1/4 tsp
  4. Garlic paste –1/4 tsp
  5. Ginger paste-1/4 tsp
  6. Soy sauce-1/4 tsp
  7. water
  8. Salt
  9. Oil

For the gravy

  1. Onion(chopped) – 1
  2. Garlic (chopped) – 1tbsp
  3. Green Chilly(chopped) – 3
  4. Soy sauce- 1 tbsp
  5. Tomato Sauce – 2 tsp
  6. Pepper powder – 1/2 tsp
  7. Sugar-1/2 tsp
  8. salt
  9. Spring onion – to garnish
  10. Oil – 2tbsp

Chilly Egg

Preparation

  1. In a bowl, beat 5 eggs and add pepper powder and salt to it.Heat little oil in a pan and make 2 omelettes using the egg mix.
  2. Cut the omelettes into long strips of 1 inch width.Prepare a batter using the ingredients mentioned above.
  3. Dip the egg strips in the batter and coat well. Fry in oil till crispy like finger fish.Once it is crispy, transfer into a tissue paper to remove excess oil.
  4. Heat oil in another pan.Saute chopped onions,garlic paste and green chilly.Once onions are light pink in color,add fried egg pieces into it and mix well.
  5. Add soy sauce,tomato sauce,pepper powder,sugar and salt(add if necessary) to it.stir well and cook on medium flame for 2 minutes.
  6. Remove from fire.
  7. Garnish with spring onions and coriander leaves.

Usually I prepare stir fry/Thoran with French beans or I add it while making Aviyal.This time I tried a Chinese preparation using French beans and it came out great.This goes well with fried rice or vegetable biriyani or Rice.

Chilly Beans (3)

Ingredients

  1. French beans(cut into medium pieces) – 1 cup
  2. Corn flour – 1 tbsp
  3. Maida/All Purpose Flour – 1 tbsp
  4. Egg – 1 tbsp
  5. Pepper Powder – 1 tsp
  6. Green Chilly (cut lengthwise) -1
  7. Red chilly paste – 1 tbsp
  8. Garlic(chopped) – 1tbsp
  9. Ginger(chopped) – 1 tbsp
  10. Onion(chopped) – 1/4 cup
  11. Capsicum(cut into medium cubes) – 2 tbsp
  12. Soy Sauce – 1 tsp
  13. Chilly Sauce – 1 tsp
  14. Tomato Sauce – 2 tsp
  15. Coriander leaves
  16. Salt
  17. Oil

Chilly Beans (2)

Preparation

  1. In a bowl, Mix corn flour ,Maida,pepper powder,red chilly paste,ginger(1tsp)- garlic(1tsp) paste,egg and salt.Add French beans to the mix and mix well using hand.Keep aside for 20 minutes.
  2. Heat oil in a pan. Fry marinated French beans for 2-3 minutes.
  3. Heat 4 tbsp oil in another pan.Saute ginger-garlic ,chopped onions till light brown in color.
  4. Add green chilly and capsicum cubes to it.Stir well.
  5. Add soy sauce,chilly sauce,tomato Sauce to it.
  6. Add little water to it and let it boil.
  7. Add fried French beans to it and mix well.
  8. Finally add chopped coriander leaves to it.
  9. Garnish with coriander leaves or spring onions.
  10. serve with rice.

This is a Chinese style Manchurian preparation with Brinjal.This recipe is adapted from Lakshmi Nair’s cookbook Magic Oven “Pachaka Kala”.This can be served as a good starter during parties.

Brinjal Manchurian (2)

 

Ingredients

  1. Brinjal(cut lengthwise) – 4
  2. Corn flour – 8 tbsp
  3. Maida/all purpose flour – 8 tbsp
  4. Ginger(chopped) – 2 tbsp
  5. Garlic(chopped) – 4 tbsp
  6. Green Chilly(chopped) – 2 tbsp
  7. Celery(chopped) – 4 tbsp
  8. Soy sauce – 2 tbsp
  9. Tomato Sauce – 3 tbsp
  10. Sugar – 1 tsp
  11. Salt
  12. Oil –
  13. Water – 1/2 cup
  14. Spring onion (chopped) -  1 cup

Brinjal Manchurian (4)

Preparation

  1. To make Batter, mix corn flour,maida and salt.Marinate brinjal pieces in the batter and keep aside for 30 minutes.
  2. Heat oil in a pan. Fry brinjal pieces till done.if you want to retain the crispiness, you can fry one more time.
  3. Heat 1 1/2 tbsp oil in a pan.Saute chopped garlic, ginger,green chilly and celery.
  4. Add soy sauce, tomato sauce,sugar,salt and stir well..check salt before adding it as soy sauce contains salt.
  5. Add 1/2 cup of water and let it boil.
  6. Once the gravy is thick, add fried brinjal pieces to it.Stir well till dry.
  7. Finally add spring onion to it.
  8. Garnish with spring onions.
  9. Serve with rice or as appetizer
