Bread – Caramel Pudding in Pressure cooker

Ingredients

  1. Bread – 3 slices
  2. Milk – 2 1/2 cup
  3. Egg – 3
  4. Sugar – 6tbsp
  5. Milk maid – 1/4 cup
  6. Vanilla essence – 3 drops
  7. Ghee

Preparation

  1. Remove crust and cut bread into 4 pieces.Boil milk with 5 tbsp sugar and keep aside.
  2. Soak bread pieces in boiled milk .
  3. Beat eggs in a blender.add milk mixed with bread pieces,milkmaid and vanilla essence to it and blend well
  4. For caramel, dissolve 1 tbsp sugar with little water. Heat a pan and bring it to boil. once bubbles comes and it turns golden brown in color turn off the heat.
  5. Immediately transfer it into a pudding mould (or you can use flat bottomed steel separator that comes with cooker) greased with ghee and mask evenly all over.
  6. Pour the egg mix into it and steam in a pressure cooker(double boil)
  7. For double boiling, pour 3/4 cup of water into the pressure cooker.Place grid inside with mould on top.cover mould with a lid or aluminum foil . this is to avoid water dripping into the mix.
  8. Close Cooker, bring to full cooking pressure on maximum heat. Reduce to minimum heat and again cook for 15 minutes.
  9. Allow cooker to cool gradually before opening.
  10. Remove foil. place an inverted serving plate over the custard and upturn.
  11. Serve either hot or cold.

Bread masala

Ingredients

  1. Bread slices – 6
  2. Onion(chopped) – 3
  3. Tomato(chopped) – 2
  4. Red chilly powder – 1/2 tsp
  5. Coriander powder – 3/4 tsp
  6. Pepper powder – 11/2 tsp
  7. Vegetable masala powder -1 tsp
  8. Mustard seeds – 1/2tsp
  9. Ghee – 4tbsp
  10. Coriander leaves
  11. Salt

Preparation

  1. Remove the bread crust and cut into square pieces.
  2. Heat 2tbsp ghee in a panand fry bread pieces on medium heat till light brown in color.(this is just like toasting bread )
  3. In the remaining ghee, splutter mustard seeds.saute chopped onions and once it becomes brown color, add hopped tomatoes and saute well.
  4. Add red chilly powder, coriander powder,veg.masala powder and once the raw smell goes add pepper powder,salt to it and stir well.
  5. Add the fried bread pieces to it and mix well.Turn off the heat.
  6. Garnish with coriander leaves.

Bread Bonda

Ingredients

  1. Bread – 8
  2. Potato – 250gms
  3. Cumin seeds powder(jeerakam) – 1/2 tsp
  4. Green chilly – 6
  5. Shallots – 10
  6. Turmeric powder – 1 pinch
  7. Coriander leaves
  8. Salt
  9. Oil

Preparation

  1. Boil potatoes .Peel off the skin and mash well.
  2. Mix potatoes with cumin seeds powder,chopped green chilly,chopped shallots,corainder leaves ,salt and turmeric powder.Make small balls.
  3. Take bread slice and remove the crust. soak the bread piece in water and squeeze out the water by pressing between your palms.
  4. Place potato mix in the centre of bread and cover with the wet bread slice to make a ball(see pic below).Repeat the same procedure for the remaining slices.
  5. Heat oil in a pan.Fry balls till golden brown in color on low flame.
  6. Serve hot with tomato ketch up.
