Ingredients

  1. Brinjal – 5
  2. Grated coconut ? 2 tbsp
  3. Garlic pod – 2
  4. Shallots – 4
  5. Green chilly – 2
  6. Curry leaves
  7. Mustard seeds – 1/2 tsp
  8. Dry red chilly – 2
  9. Urad dal – 1/4 tsp
  10. Oil
  11. Salt

Preparation

  1. Chop brinjal into small pieces.
  2. Grind coarsely grated coconut, chopped garlic,green chilly and chopped shallots and keep aside.
  3. Heat oil in a pan. splutter mustard seeds,dry red chilly, urad dal, and curry leaves.Add chopped brinjal pieces,salt and cook till soft.
  4. Add the coocnut mix to brinjal mix and stir well .Turn off the heat.
  5. Serve hot with rice.

Ingredients:

  1. Brinjal (medium,cut into small pieces) – 4
  2. Onion – 1
  3. Tomato – 1
  4. Ginger-  1/2″ piece
  5. green chilly – 3
  6. Turmeric powder – 1/2 tsp
  7. Red chilly Powder – 1/2 tsp
  8. Curry leaves – 2 sprigs
  9. Mustard seeds -1 tsp
  10. salt
  11. Oil

Preparation:

  1. Make a fine paste of curry leaves ,green chilly and ginger.
  2. heat oil in a pan.Splutter mustard seeds.Add chopped onions and fry till brown.
  3. Add tomato and green chilly paste to it and stir for 2-3 mins.
  4. Add chopped brinjal pieces,tumeric powder,red chilly powder,salt ,1 cup of water and mix well.
  5. Add little oil to it and cover and cook till done.
  6. If you want less spicy ,you can add coconut milk to it.
  7. Serve warm  with rice or roti.
