butter chicken

 

 

This is one of my favourite chicken curry  and it is adapted from Mrs. lakshmi Nair’s recipes.she is hosting the “magic oven” cookery show on Kairali TV.i always love her way of presentation , her dressing  and the  beautiful smile on her face.Hope you all enjoy this yummy mouthwatering curry..

Ingredients:

  1. Chicken( cut into pieces) – 1/2 kg
  2. Ginger paste – 2tsp
  3. Garlic Paste – 2tsp
  4. Ginger-garlic (chopped into pieces) – 1 tbsp
  5. Onion(chopped) – 3
  6. Tomato -2
  7. Turmeric powder – 1/2 tsp
  8. kashmiri chilly powder – 1 tbsp
  9. Kasoori Methi powder – 2 tsp
  10. Cashewnut Paste – 2 tbsp
  11. Cloves -6
  12. Cinnamon stick – 2
  13. cardamom – 4
  14. Oil
  15. Salt
  16. Fresh cream -1/4 cup
  17. Butter – 2tbsp
  18. Coriander leaves to garnish

Preparation

  1. Marinate chicken pieces with ginger-garlic paste and salt for 30 mins.Fry till light brown in color.
  2. Heat oil in a pan.Saute cloves,cinnamon,cardamom,chopped ginger-garlic  and onions.
  3. Add turmeric powder,red chilly powder,kasoori Methi powder and once the raw smell goes add chopped tomatoes and fry till done.
  4. Once it is cool, Grind it into a fine paste.
  5. In a pan ,mix well fried chicken pieces,masala paste and cashewnut paste,salt , and bring it to boil .
  6. Once the gravy is dry, remove from heat.Garnish with fresh cream,butter  and coriander leaves.
  7. Serve warm  with rice or chappathi

 butter paneer  (2)

Ingredients:
  1. Paneer-1 cup
  2. Big Onion-2
  3. Tomato -2
  4. Green Chilly-1
  5. Ginger-garlic Paste-1 tbsp
  6. Almond Paste(u can use cashewnut paste also)-2 tbsp
  7. Turmeric powder-1/4 tsp
  8. Red Chilly Powder-1tbsp
  9. Coriander powder-1/2 tsp
  10. Kasoori Methi(Dry fenugreek Leaves) powder-1tbsp
  11. Garam Masala-1/4 tsp
  12. Coriander leaves
  13. Butter-3tbsp
  14. Salt
  15. Fresh Cream-1 tbsp
Preparation:
  1. Saute onions,green chilly in little butter till light brown colourand let it cool .Grind it to a thick paste.
  2. Make tomato puree by boiling tomatoes in water for 10 mins.remove from water and dip it in cold water to remove the outer skin.Blend in a mixer till smooth.Strain to remove seeds.
  3. Fry paneer cubes till light brown on all sides and soak the cubes in warm water to make it soft.
  4. soak about 5-6 nos almonds in water for about 30 mins and grind it to a fine paste adding 1/4 cup of water.
  5. Heat butter in a kadai and add the onion paste and saute till brown in color.Then add ginger-garlic paste and saute for 2-3 mins.
  6. Add almond paste,tomato puree turmeric powder,red chilly powder,coriande rpowder, garam masala powder,kasoori methi powder ,salt and mix well and cook for 4 mins.
  7. Add Paneer cubes with little water and cook on medium heat for 5 mins.Garnish with coriander leaves and Fresh cream.
  8. Serve with chappathis or Naan.
