Wish you all a happy and prosperous new year. I wish all your resolutions and dreams come true in this Chinese year of the tiger. So, I’m going to start off my first post of the year with a Chinese touch with some yummy spice :-)

We usually make Sāmbhar using okra, but I’m going to share a unique recipe using okra in a Chinese style.

Pepper_Okra

Ingredients

  1. Okra (Lady’s Finger) – 6
  2. Onion – 1
  3. Green Chilly – 1
  4. Garlic(Chopped) – 4
  5. Pepper Powder – 1 1/2 tsp
  6. Corn Flour – 2 tsp
  7. Maida (All purpose flour) – 1 tsp
  8. Egg – 1
  9. Oil
  10. Curry leaves

Preparation

  1. Wash okra and pat dry with a tissue paper to remove stickiness
  2. Cut it into long pieces
  3. Mix 1 1/2 tsp of corn flour, Maida, egg, salt and 1 tsp of pepper powder
  4. Marinate okra pieces with the mix and keep aside for 30 minutes
  5. Dust marinated okra pieces with the remaining corn flour and fry till both sides are light brown
  6. Heat oil in a frying pan again and sauté chopped onion, garlic and green chilly.
  7. Add fried okra, 1/2 tsp pepper powder and stir well.
  8. Serve hot

This is an easy and quick side dish for rice..The good thing is that you can get rid of the normal stickiness if you prepare like this..

okra scramble

 

Ingredients:

  1. Okra(vendakka) – 8-10  nos.
  2. Egg – 2
  3. Onion (chopped) – 1
  4. Green chilly – 2
  5. Ginger – 1/2 inch piece
  6. Red chilly powder – 1tsp
  7. Turmeric Powder – 1/4 tsp
  8. Pepper powder – 1/2 tsp
  9. Meat masala powder – 1 tsp
  10. Curry leaves
  11. Salt
  12. Oil – 3tbsp

How to Make:

  1. Wash okra and cut lengthwise. Chop into thin slices.
  2. Heat oil in a pan.Saute chopped onion,ginger and green chilly.
  3. Add okra pieces and all the masala powders and stir well. cover and cook till okras are done.
  4. Then add beaten eggs to it and scramble it till dry.
  5. Garnish with curry leaves.

Ingredients:
  1. Okra-250 gms
  2. Onion(chopped)-2
  3. Tomato-2
  4. Green Chilly-2
  5. Ginger-Garlic paste-1 tbsp
  6. Cinnamon-1 piece
  7. Cloves-2
  8. Bay leaf-1
  9. Turmeric powder-1/2 tsp
  10. Jeera-1/4tsp
  11. Chilly Powder-1 tsp
  12. Coriander Powder-1/2 tsp
  13. Garam Masala Powder-1/2 tsp
  14. kasoori methi powder-1/4 tsp
  15. Salt to taste
  16. Coriander Leaves
  17. Oil-1 cup
Preparation
  1. Wash and clean okra well.To avoid stickiness of okra Pat dry with a paper tissue.
  2. Heat oil in a pan and shallow fry the okra pieces till light brown.place the pieces in a kitchen tissue to absorb excess Oil.
  3. Heat oil in another pan and add cloves,cinnamon,bayleaf and jeera.
  4. Add chopped onions and fry till brown in color.then add green chilly ,ginger-garlic paste and fry for sometime.
  5. Add tomatoes and all the masala powders,salt and cover and cook till tomatoes are done.Stir well to avoid sticking to the pan.
  6. Add fried okra pieces with little water and mix well.cover and cook for 2-3 mins.
  7. Sprinkle garam Masala powder on top and garnish with corainder leaves.
  8. Serve hot with chappathi.
