Brinjal (Eggplant) Vindaloo

Usually people say that brinjal is not good for eyes, do not want to believe and curios to know more? then check out this article!. Nevertheless, I’m going to use it for my yummy curry anyway πŸ™‚

Actually Vindaloo is quite popular in goan cuisine and it is normally prepared using either chicken or lamb. I prepared this one with brinjal just for a change.This is a yummy and spicy dish for veggie lovers and it tastes great with rotis.

 

Brinjal Vindaloo

Ingredients:

  1. Brinjal(medium) – 4
  2. Onion (chopped) – 2
  3. Tomato (chopped) – 1
  4. Mustard seeds – 2 tsp
  5. Cumin seeds(jeerakam) –1/2 tsp
  6. Fenugreek seeds (uluva) – 1/4 tsp
  7. Turmeric powder – 1tsp
  8. Red chilly powder – 1 1/2 tsp
  9. Ginger-garlic paste –  1 tbsp
  10. Vinegar – 2 tsp
  11. Salt
  12. Coriander leaves

Preparation:

  1. Heat a kadai and fry 1tsp mustard seeds, cumin seeds and fenugreek seeds on low flameΒ  . Then grind it to a powder.
  2. Deep fry brinjal pieces and keep aside..
  3. Make a paste by grinding turmeric powder, red chilly powder,ginger-garlic paste,vinegar and above powdered mix.
  4. Heat oil in a pan.Splutter mustard seeds.sautΓ© chopped onions till brown and once it is done add the masala paste to it and stir well..once the raw smell goes add chopped tomatoes to it.
  5. Finally add fried brinjal pieces and salt.
  6. Cover and cook with little water till done.
  7. Garnish with coriander leaves.
