Carrot Payasam

Ingredients

  1. Carrot(medium) – 4
  2. Cashew nuts (soaked in water for 15 mins) – 15
  3. Milk – 2 cup
  4. Water – 1 cup
  5. Ghee – 1 tbsp
  6. Cashew nuts(chopped and fried) – 8
  7. Sugar – 5 tbsp
  8. Cardamom – 6

Preparation

  1. Peel and grate carrots.Heat ghee in a pan and saute till it changes it color. let it cool.
  2. Put soaked cashew nuts and grated carrot into a blender with water and blend till smooth.
  3. Boil milk and add in the blended carrot and sugar to it and boil till it thickens.Add powdered cardamom to it and combine well.Remove from heat.
  4. Chill it thoroughly and garnish with fried cashewnuts before serving.

This Mango shake is utterly delicious and a perfect refreshing drink for the hot summer weather .

Ingredients

  1. Mango(ripe) – 2
  2. Milk – 2 cup
  3. Sugar – 2 tbsp
  4. Ice cubes – 5

Preparation

  1. Peel off the skin and dice mangoes into cubes.
  2. In a Blender, blend mangoes together with milk, sugar and crushed ice cubes.
  3. Garnish with chopped mango pieces.Serve Chill.

:- For healthy reasons, it is advisable to use low fat milk and less sugar.:-)

Cucumber Chutney

Ingredients

  1. Salad Cucumber(grated) -2
  2. Curd -1 cup
  3. Garlic  pods -2
  4. Green chilly -2
  5. Asafoetida powder -1 pinch
  6. Mustard seeds -1/2 tsp
  7. Curry leaves -1 sprig
  8. Lime juice -1/2 tsp
  9. Oil -2 tsp
  10. Salt
  11. Sugar
  12. Coriander leaves -to Garnish

 

Preparation

  1. Peel and grate cucumber . In a Bowl, add grated cucumber to curd and mix  well.
  2. Heat oil in a pan. splutter mustard seeds.Add asafoetida powder,curry leaves,chopped green chilly, chopped garlic and saute well.
  3. Add the seasonings to cucumber mix.
  4. Add sugar and salt according to your taste.
  5. Garnish with chopped  Coriander leaves.
  6. Serve with  Fried Rice.
