Chicken Roast (2)

 

Ingredients

  1. Chicken(cut into medium cubes) – 1/2 kg
  2. Onion(cut lengthwise,thinly sliced,medium ) – 2
  3. Ginger-Garlic paste – 2 tsp
  4. Turmeric powder – 1/4 tsp
  5. Kashmiri chilly powder – 1tbsp
  6. Coriander powder – 1 tbsp
  7. Jeera powder – 1/4 tsp
  8. Pepper powder – 1/2 tsp
  9. Fennel seeds powder – 1/4 tsp
  10. Pudina leaves (chopped) – 1tsp
  11. Coriander leaves (chopped) – 1 tbsp
  12. kuskus paste –1 tsp
  13. Lime juice – 2 tsp
  14. Curry leaves – 1 sprig
  15. Onion(fried) –to garnish
  16. Potato pieces(cut lengthwise and fried) – 1, to garnish
  17. Coconut Oil
  18. salt

Preparation

  1. Marinate chicken pieces with lime juice,chopped coriander leaves,,chopped pudina,turmeric pwoder,pepper powder,fennel seeds powder and salt.Keep in the fridge for 3 hours to get marinated well.
  2. Heat coconut oil in a pan.Saute thinly sliced onions,curry leaves and once onion starts to turn light brown add red chilly powder,coriander powder,jeera powder mixed with little water  and stir well.
  3. Once the raw smell goes,add ginger –garlic paste ,kusksu paste to it and mix well.
  4. once oil clears add marinated chicken pieces to it and mix well.
  5. cover and cook on low flame till done.no need to add water as chicken itself produces water while cooking.
  6. In the mean time Heat little oil in another pan and fry potato pieces and onion  till brown and crispy.
  7. Once chicken is cooked well and dry, remove from fire.
  8. Garnish with fried onions and potato slices.

This curry is prepared using brinjal and prawns in a  less spicy masala. it goes well with Rice or Roti.

prawn-Brinjal Curry (1)

Ingredients

  1. Brinjal(cut into medium thin slices) – 5
  2. Prawns – 250 gms
  3. Cumin seeds – 3/4 tbsp
  4. Mustard seeds – 1 1/4 tbsp
  5. Green Chilly –2
  6. Garlic – 4
  7. Ginger – 1/2 “ piece
  8. Tomato (cut into medium pieces) – 2
  9. Turmeric powder – 1/4 tsp
  10. Salt
  11. Oil
  12. Curry leaves
  13. Water – 1/4 cup

prawn-Brinjal Curry (3)

 

 

Preparation

  1. Heat oil in a pan and fry brinjal pieces till both sides are light brown.strain and keep aside.
  2. In the same oil fry prawn pieces(don’t over cook prawns as prawn tend to be rubbery)  till golden brown.
  3. Make a paste of 1/2 tbsp cumin seeds,1 tbsp mustard seeds,green chilly ,garlic and ginger.
  4. Heat 1 tbsp oil in another pan.Splutter 1/4 tbsp mustard seeds,curry leaves and 1/4 tbsp cumin seeds. once it is done,add the paste to it and saute well.
  5. Add tomato pieces and fry well. once tomatoes are all done, add turmeric powder and salt to it. Stir well.
  6. Add 1/4 cup of water(if you want more curry, u can add more water) to it and mix well.
  7. Cover and cook on low flame for 5 minutes.
  8. Remove from fire.Serve with rice.

Today I am going to share an easy and delicious recipe of Paneer and Capsicum in a thick gravy.This goes well with roti,Naan or Bread.

Paneer-Bell Pepper masala (2)

Ingredients

  1. Paneer(cottage cheese,cut into cubes) – 250 gms
  2. Capsicum/Bell pepper – 2
  3. Tomato (chopped) – 2
  4. Onion(chopped) – 2
  5. Ginger paste – 1 tsp
  6. Garlic(chopped) – 1 tbsp
  7. Dry Red Chilly (make a paste) – 3
  8. Cumin seeds/Jeerakam – 1 tbsp
  9. Ginger(cut lengthwise) – 1 tsp
  10. Garam Masala – 1/2 tsp
  11. Kasoori Methi powder – 1/2 tsp
  12. salt
  13. Coriander leaves – to garnish

Preparation

  1. soak dry red chilly in little water for sometime. Make a fine paste.
  2. Heat oil in a pan.splutter cumin seeds and once it starts to brown,add chopped onion and saute well.
  3. Add chopped ginger,ginger-garlic paste,chilly paste,tomato chopped and mix well.
  4. Add capsicum pieces(you can add different colored capsicum if you like),garam masala ,salt and stir well to get coated with the masala.
  5. Finally add paneer cubes ,salt ,kasoori methi powder and mix  gently.Stir cook on low flame for 3-4 minutes.
  6. Remove from fire.Garnish with coriander leaves.
