Chinese Egg Chilly/Chilly Egg
This is Chinese style of preparing egg by making omelette first and then frying in the batter and saute in a spicy sauce.This spicy dish goes great with fried rice.
Ingredients
To make 2 Omelettes:

Egg – 5
-
Pepper powder – 1 tsp
-
Oil
-
Salt
For Making Batter
-
Corn flour –3 tbsp
-
All purpose flour/Maida – 2 tbsp.

Pepper powder – 1/4 tsp
-
Garlic paste –1/4 tsp
-
Ginger paste-1/4 tsp
-
Soy sauce-1/4 tsp
-
water
-
Salt
-
Oil
For the gravy
-
Onion(chopped) – 1
-
Garlic (chopped) – 1tbsp
-
Green Chilly(chopped) – 3
-
Soy sauce- 1 tbsp
-
Tomato Sauce – 2 tsp
-
Pepper powder – 1/2 tsp
-
Sugar-1/2 tsp
-
salt
-
Spring onion – to garnish
-
Oil – 2tbsp
Preparation
-
In a bowl, beat 5 eggs and add pepper powder and salt to it.Heat little oil in a pan and make 2 omelettes using the egg mix.

Cut the omelettes into long strips of 1 inch width.Prepare a batter using the ingredients mentioned above.

Dip the egg strips in the batter and coat well. Fry in oil till crispy like finger fish.Once it is crispy, transfer into a tissue paper to remove excess oil.

Heat oil in another pan.Saute chopped onions,garlic paste and green chilly.Once onions are light pink in color,add fried egg pieces into it and mix well.

Add soy sauce,tomato sauce,pepper powder,sugar and salt(add if necessary) to it.stir well and cook on medium flame for 2 minutes.

Remove from fire.

Garnish with spring onions and coriander leaves.
