Potato Thoran (1)

Ingredients

  1. Potato(boiled and cut into cubes) – 1 cup
  2. Onion(chopped,medium) –1
  3. Ginger (chopped) – 2tsp
  4. Garlic (chopped) – 1 tsp
  5. Green Chilly(chopped) –2
  6. Grated Coocnut – 1/4 cup
  7. Turmeric powder –1/4 tsp
  8. Mustard seeds – tsp
  9. Cumin seeds – 1tsp
  10. Urad daal –1/4 tsp
  11. Chana daal (kadala parippu) – 1tsp
  12. asafoetida powder –1/4 tsp
  13. Dry red Chilly –2
  14. Curry leaves
  15. Salt
  16. Coconut oil
  17. Coriander leaves

Potato Thoran (2)

Preparation

  1. Heat oil in a  pan.Add mustard seeds and let it splutter.Add urad daal,cumin seeds,chana dal,dry red chilly curry leaves and once the nice aroma of roasted daal comes ,add chopped ginger,garlic and green chilly.Let it saute for sometime on medium flame.
  2. Add chopped onions and once it turns brown,add turmeric powder,asafoetida powder and mix well.
  3. Finally add potato cubes and salt  to it and stir well.
  4. Add grated coconut and chopped coriander leaves to it and mix well.let it cook for 1 minute and remove from fire.
  5. serve with rice.

This simple and delicious curry is prepared using boiled potatoes with spices and dried fenugreek leaves.it goes well with chappathi or roti.

Aloo Tharkari (3)

Ingredients

  1. Potatoes (cut into small cubes,boiled) – 500gm
  2. Crushed ginger- 2”piece
  3. Green chilly – 2
  4. cumin(jeera)  powder – 1 tsp
  5. Kashmiri red chilly powder- 1 tsp
  6. Turmeric powder – 1 tsp
  7. Aasafoetida(hing) –a small pinch
  8. Cloves(laung) –6
  9. Bayleaf(tej patta) –1
  10. Amchur powder(dried mango powder ) –1/2 tsp
  11. Dried fenugreek leaves(kasoori methi,soaked in water and crumbled) –3tbsp
  12. Oil –1/2 cup
  13. Coriander leaves – to garnish
  14. Salt – to taste

Aloo Tharkari (2)

Preparation

  1. Heat oil in a pan.Add asafoetida and cook till it dissolves.Add cloves and bay leaf and fry for 20 secs.
  2. Add the spice powders mixed with little water,chopped green chilly and crushed ginger.Fry for another 30secs.
  3. Add about 4 cups of water and bring it to boil.
  4. Add boiled potatoes and salt.Reduce heat and cook till desired consistency is obtained.
  5. Sprinkled crumble dried fenugreek leaves to it and mix well.Remove from fire.
  6. Garnish with coriander leaves.(Since I don’t have coriander leaves in stock,I didn’t do the garnishSmile
  7. Serve with roti.
  8. The actual recipe calls to mash potatoes after boiling.But I forgot to do it.Winking smile

cabbage -potato subji

Ingredients

  1. Potato(medium,cut lengthwise) – 2
  2. Cabbage – 150 gms
  3. Onion – 2
  4. Tomato – 2
  5. Green chilly – 2
  6. Turmeric powder – 1/4 tsp
  7. Coriander powder – 1/2 tsp
  8. Red chilly powder – 1/4 tsp
  9. Cumin seeds – 1/4 tsp
  10. Garam masala powder- 1/4tsp
  11. curry leaves
  12. salt
  13. Oil

Preparation

  1. Since cabbage needs less time to cook , first boil potatoes with salt and tumeric powder and keep aside.
  2. Heat oil in a pan. Add cumin seeds,chopped onions,masala powders,chopped tomatoes and saute well.
  3. Add shredded cabbage(here I used purple cabbage) to it and mix.
  4. Cover and cook on low flame without adding water.once it is well cooked add boiled potatoes to it and stir.
  5. Garnish with curry leaves.
