Paal kappa is a popular delicacy of Kerala cuisine.This is  prepared using tapioca in coconut milk .This goes well with spicy Kerala fish curry and shallots chammanthi.

Paal Kappa ulli chammanthi (1)

Ingredients

  1. Tapioca(cut into cubes) – 1 kg
  2. Shallots – 6
  3. Garlic – 2
  4. Cumin seeds – 1 pinch
  5. Grated coconut – 1/2 cup
  6. Coconut milk – 1/2 cup
  7. Coconut oil – 2 tbsp
  8. Salt
  9. Curry Leaves – 2 sprigs

Preparation

  1. Boil tapioca with salt and water till tapioca pieces are cooked well.Once it is done, strain the water.
  2. Grind shallots,garlic and cumin seeds to a paste.
  3. Heat a pan and transfer the tapioca pieces into it.Add the shallot paste and coconut milk to it .Mix well.
  4. Once it starts to boil, add grated coconut ,curry leaves and coconut oil to it.stir well..
  5. Remove from fire.

For Ulli chammanthi

  1. Shallots –8
  2. Green Chilly – 3
  3. Salt
  4. Coconut oil

Grind shallots,green chilly to a coarse paste.Add salt and oil to it..

This is an simple and tasty upma which can be prepared using leftover idiyappam.

idiyappam Upma (1)

Ingredients

  1. Idiyappam – 5 nos
  2. Carrot – 1/4 cup
  3. Onion(medium,chopped) –1
  4. Turmeric powder-1 pinch
  5. Curry leaves – 2 sprigs
  6. Mustard seeds – 1 tsp
  7. Cashewnuts – 1tbsp
  8. Raisins –1 tbsp
  9. Ghee – 1 tbsp
  10. Salt

Preparation

  1. Cut the idiyappam into small pieces and keep aside.
  2. heat ghee in a frying pan. Splutter mustard seeds and add cashewnuts,raisins and saute it.
  3. Add finely chopped onions and carrots.Add curry leaves and stir fry for a minute.
  4. Add turmeric powder,salt  and idiyappam.Mix well.Remove from fire.
  5. Serve hot as evening snack.

This is a unique breakfast recipe with maida and rice flour.

spicy ottada

Ingredients:

  1. Maida – 1/2 cup
  2. Rice flour – 1/2 cup
  3. Milk – 1 cup
  4. Shallots – 12
  5. Green chilly – 3
  6. Curry leaves
  7. Yeast – 1/2 tsp
  8. Baking powder – a pinch
  9. Coconut oil – 2 tsp
  10. Water – 1/2 cup
  11. Ghee – 2tsp
  12. salt – as required

Preparation:

  1. Boil milk with water and keep aside.
  2. To make batter,take a vessel and mix maida and rice flour by adding milk slowly without forming lumps.
  3. Add yeast ,baking powder to it and keep covered for 2 hours.
  4. Heat
