Vegetable Dal Curry

This is a healthy and nutritious curry and it goes well with roti or rice..

Ingredients:

  1. Moong Dal  –  100 gms
  2. Potato (medium ,grated) –  2
  3. Grated carrot – 2
  4. Grated cabbage – 50 gm
  5. Tomato,chopped – 2
  6. Green chilly – 4
  7. Ginger – 1 piece
  8. shallot – 3
  9. Turmeric powder – 1/4 tsp
  10. Garam masala – 1/4 tsp
  11. Oil – 2 tbsp
  12. Mustard seeds – 1/4 tsp
  13. Urad dal – 1/2 tsp
  14. Curry leaves
  15. Salt

Preparation:

  1. Pressure cook moong dal with little turmeric powder  and keep aside.
  2. Add veggies, green chilly, grated ginger, garam masala  and cook till veggies are done. Mix well with moong dal mix.
  3. Heat oil in pan. Splutter mustard seeds, urad dal, curry leaves.
  4. Saute shallots and add it to the curry.
