Quick Apple Burfi
A family recipe since January 2011
A light, fruity twist on classic Indian burfi, made with grated apple, coconut and warming spices. This quick, family-friendly sweet sets in the fridge and cuts into perfect pieces for sharing.
90 min total8 servings
Ingredients
- Apple - 2 cup
- Sugar - 2 cup
- Coconut - 3 cup
- Ghee - 2 tbsp
- Lime juice - 1/2 tsp
- Cardamom powder - 1 tsp
- Ginger juice - 1 tsp
- Condensed milk - 1 tbsp
- Cashew nuts for garnish
Instructions
- 1Grate the apples and the coconut, or use pre-grated coconut if you prefer; set them aside so everything is ready at the stove.
- 2Heat the ghee in a wide pan over medium heat, then add the grated apple, sugar and grated coconut and stir continuously until the sugar melts completely and the mixture begins to come together.
- 3Stir in the lime juice, ginger juice and cardamom powder, mixing thoroughly so the spices are evenly distributed and fragrant.
- 4Continue to cook, stirring frequently, until the fruit mixture dries slightly and comes together in the pan.
- 5Add the condensed milk and cook, stirring, until the mixture thickens and starts to leave the sides of the pan.
- 6Remove the pan from the heat and quickly spread the hot mixture evenly into a greased pan; press the cashew nuts into the surface so they stick and look attractive.
- 7Let the burfi cool at room temperature, then refrigerate for at least 1 hour before removing from the pan and cutting into pieces.
- 8Store the cut burfi in an air-tight container in the refrigerator for up to 3 days.
