35 min total12 muffins
Ingredients
- Pancake or waffle mix - 1 cup
- Apple - 1 whole
- All-purpose flour - 1/3 cup
- Brown sugar - 1/3 cup
- Baking powder - 2 tsp
- Ground cinnamon - 3/4 tsp
- Milk - 1 cup
- Vegetable oil - 1/3 cup
- Egg - 1 whole
- Vanilla essence - 1 tsp
- Granulated sugar - 4 tsp
- Ground cinnamon - 1/2 tsp
Instructions
- 1Peel, core, and chop the apple into small pieces so they distribute evenly through the batter.
- 2Preheat the oven to 400°F and lightly grease a muffin tin or line it with paper baking cups.
- 3In a large bowl, whisk together the pancake or waffle mix, all-purpose flour, brown sugar, baking powder, and 3/4 tsp ground cinnamon until evenly combined.
- 4In a separate bowl, whisk the milk, vegetable oil, egg, and vanilla essence until smooth and slightly frothy.
- 5Pour the wet mixture into the dry ingredients and stir gently until the dry ingredients are just moistened; a few dry streaks are fine and will give tender muffins.
- 6Fold the chopped apple into the batter until it is evenly distributed.
- 7Fill each muffin cup 3/4 full with the batter so the muffins have room to rise.
- 8Stir together the 4 tsp granulated sugar and 1/2 tsp ground cinnamon for the topping, then sprinkle it evenly over each filled muffin cup for a crunchy, aromatic finish.
- 9Bake for 16-18 minutes, until a toothpick inserted comes out clean and the muffin tops are lightly golden.
- 10Let it cool for 2 minutes in the tin to set, then remove the muffins and transfer them to a cooling rack to finish cooling.
- 11This recipe makes 12 muffins.
