Aval Ladoo (Poha Ladoo)
A family recipe since March 2011
Light, sweet ladoos made from toasted rice flakes, jaggery syrup and coconut—simple to prepare and a perfect kid-friendly treat. They come together quickly and keep well for snacking.
30 min total8 servings
Ingredients
- Rice flakes (poha) - 4 cup
- Jaggery syrup - 1 cup
- Coconut - 1/4 cup
- Cardamom powder - 1 tsp
Instructions
- 1Heat a large dry skillet over medium heat, add the rice flakes and dry-roast while stirring constantly until the flakes are crisp and lightly toasted; take care not to burn them.
- 2Let the toasted rice flakes cool slightly, then grind them in a mixer or blender to a fine powder and transfer the powder to a large mixing bowl.
- 3If you are not using pre-grated coconut, grate the coconut finely so it mixes easily.
- 4Add the jaggery syrup a little at a time to the powdered poha, stirring well after each addition so the mixture starts to come together; then stir in the grated coconut and cardamom powder until everything is evenly combined.
- 5Allow the mixture to cool until it is comfortable to handle, then press small portions firmly between your palms to shape them into ladoos.
- 6Serve the ladoos at room temperature; optionally roll them in a little extra grated coconut for a pretty finish.
