Aviyal

Aviyal is a dish that has unique place in kerala feast sadhya.
Ingredients:
  1. Beans – 1/2 cup
  2. Drumstick – 2
  3. Carrot – 3
  4. Plaintain/Raw Banana – 2
  5. Elephant Yam – 1/2 cup
  6. Snake Gourd – 1/4 cup
  7. String Beans – 1/2 cup
  8. Bitter Gourd – 1/4 cup
  9. Ashgourd – 1/4 cup
  10. Green Chilly – 5
  11. Turmeric Powder – 1 tsp
  12. Chilly Powder – 2 tsp
  13. Jeera – 1 tsp
  14. Yogurt (Curd) – 3 cup
  15. Coconut (grated) – 1
  16. Coconut oil – 3 tbsp
  17. Curry leaves  -a bunch
  18. Salt to taste
Preparation:
  1. Clean and cut all vegetables into finger size.
  2. Boil all vegetables with turmeric, chillypowder, salt and a little water. Grind coconut, green chilly, jerra and curry leaves together to make a coarse paste.
  3. Once vegetables properly cooked, add yogurt and stir well.
  4. Add coconut paste and cook for some more time by covering the lid.
  5. Once the raw smell goes, turn off the flame and add coconut oil and 1 tsp water
  6. Serve with your favorite rice
