Kerala Banana Cheese Halwa

Sweet, caramelized banana halwa enriched with melted cheese and fragrant cardamom—an easy Kerala-style treat that firms up so you can cut it into neat squares once it cools.

Ingredients
- Kerala banana - 2 whole
- Cheese - 2 tbsp
- Sugar - 2 tbsp
- Cardamom powder - 1 tsp
- Ghee - 1 tbsp
- Almonds - 2 whole
Instructions
- 1Boil the 2 whole Kerala bananas until soft, then drain if needed and mash them well with a spoon.
- 2Heat a heavy pan over medium heat, add the mashed banana along with 2 tbsp cheese and 2 tbsp sugar, and cook, stirring frequently, until the mixture darkens to a rich brown and starts to come together.
- 3Stir in 1 tsp cardamom powder and 1 tbsp ghee, lower the heat to low, and cook the halwa, stirring, for 5 minutes so the flavors meld and excess moisture evaporates.
- 4Grease a plate with a little ghee, transfer the hot halwa onto the plate, and spread it evenly so it sets uniformly.
- 5Fry the 2 whole almonds in a little ghee until golden and aromatic, then scatter them over the halwa as a garnish.
- 6Once it is cool, cut the set halwa into your desired shapes and serve.
- 7Optional: serve warm with a cup of tea or enjoy the pieces as a sweet snack.
