Ingredients
- All-purpose flour or maida - 1 1/2 cup
- Bananas - 3 whole
- Egg - 1 whole
- Sugar - 1 cup
- Baking soda - 1 tsp
- Salt - 1/2 tsp
- Vegetable oil - 1/3 cup
- Vanilla extract - 1 tsp
Instructions
- 1Combine the all-purpose flour, sugar, baking soda, and salt in a large bowl and whisk until evenly mixed to create the dry base.
- 2In a separate bowl, mash the bananas until mostly smooth, then stir in the egg, vegetable oil, and vanilla extract until blended and uniform.
- 3Add the banana mixture to the dry ingredients and stir just until moistened; stop mixing as soon as the batter comes together and a few small lumps remain to keep the muffins tender.
- 4Grease or line muffin cups with paper liners and fill each cup half full with batter so the muffins rise evenly.
- 5Bake at 375° for 18-22 minutes, until a toothpick inserted near the center comes out clean and the tops are set.
- 6Cool the muffins in the pan for 10 minutes, then transfer them to a wire rack to cool completely so they finish setting without becoming soggy.
- 7Make a dozen muffins with this batter so you have enough for snacks and lunches.
- 8Serve warm with a pat of butter or a smear of cream cheese, if you like.
