Whole-Wheat Bhatura
A family recipe since September 2009
Light, puffy whole-wheat bhatura made with a touch of curd and egg for extra lift; these fried breads pair perfectly with spicy chole or your favorite curry. Make the dough ahead and let it rest for a pillowy texture.

Ingredients
- Wheat flour or all-purpose flour - 2 cup
- Baking powder - 1/4 tsp
- Curd - 1 tbsp
- Egg - 1 whole
- Salt - 1/4 tsp
- Sugar - 1/4 tsp
- Ghee - 1 1/2 tsp
- Water
- Oil for deep frying
Instructions
- 1Whisk the wheat flour, baking powder, and salt together in a large bowl, then sift once to combine and aerate the mixture.
- 2In a separate bowl, beat the egg with the curd, sugar, and ghee until smooth, then pour this mixture into the flour.
- 3Mix the ingredients and add water a little at a time while bringing the dough together; knead until the dough is soft and smooth.
- 4Cover the bowl and let the dough rest for at least 2 hours so it relaxes and becomes slightly airy.
- 5Divide the rested dough into small balls and gently roll each one into a thick round, similar to the thickness you use for puris.
- 6Heat enough oil in a deep pan for frying until hot, then carefully slide in a bhatura and fry, turning once, until both sides are light brown.
- 7Transfer the fried bhaturas to paper towels to drain briefly, then serve them warm.
