Crispy Brinjal Fry
A family recipe since June 2008
A simple, smoky-sweet pan-fried brinjal prepared with a dry spice rub and shallow-fried in coconut oil until golden. Ready in just over an hour, it makes a comforting side for rice or roti.
Ingredients
- Large eggplant - 2 whole
- Chili powder - 1 tbsp
- Turmeric powder - 1 tsp
- Rice flour - 1/2 tsp
- Salt, to taste
- Coconut oil
Instructions
- 1Slice the large eggplants into round pieces and set them aside so they are ready to season.
- 2In a bowl, combine 1 tbsp chili powder, 1 tsp turmeric powder, 1/2 tsp rice flour and salt; mix well so the dry spices are evenly distributed without adding any water.
- 3Toss the eggplant slices in the dry spice mixture until each piece is coated, then cover and let them marinate for 1 hr so the flavors develop.
- 4Heat coconut oil in a frying pan for shallow frying; when the oil is hot, add the eggplant in a single layer without crowding the pan.
- 5Shallow-fry the eggplant slices in batches, turning once, until both sides are brown in color and the flesh is tender.
- 6Transfer the fried slices to paper towels to drain any excess oil, then serve warm.
- 7Optional: serve with coconut chutney or plain rice for a simple, satisfying meal.
