Ingredients
- Soya chunks - 1 cup
- Red chili powder - 1 tbsp
- Ginger-garlic paste - 1 tbsp
- Turmeric powder - 1/2 tsp
- Garam masala - 1 tsp
- Onion - 2 whole
- Green chili - 2 whole
- Capsicum (green and yellow) - 1 whole
- Tomato - 2 whole
- Tomato sauce - 1 tbsp
- Soy sauce - 1 tbsp
- Corn flour - 1 tbsp
- Water - 1 cup
- Oil
- Salt, to taste
- Coriander leaves, for garnish
Instructions
- 1Bring 3 cups of water to a boil, add the soya chunks, and soak them for 10 minutes; then squeeze out the excess water and cut each piece in two.
- 2Make a smooth paste of the onions in a blender, and purée the blanched tomatoes to a smooth paste; also pulse the green chilies into a small paste.
- 3In a small bowl, combine the red chili powder, ginger-garlic paste, turmeric powder, garam masala and a little water to form a thick spice paste.
- 4Toss the spice paste with the soaked soya chunks and let them marinate while you prepare the sauce.
- 5Heat oil in a pan over medium heat, add the onion paste and green chili paste, and sauté until they smell fragrant and begin to brown slightly.
- 6Add the tomato paste and continue to sauté until the oil clears from the mixture.
- 7Add the marinated soya chunks, then stir in the capsicum, soy sauce, tomato sauce and salt; stir everything well so the sauce coats the soya.
- 8Mix 1 cup of water with the corn flour to make a smooth slurry, pour it into the pan, mix well, cover and cook for 5 more minutes.
- 9Garnish with coriander leaves and serve hot.
- 10Optional: serve with steamed rice or fried noodles for a complete meal.
