Coconut Burfi
A family recipe since October 2007
A classic Indian sweet made from coconut, milk and sugar that sets into melt-in-your-mouth squares—perfect for festivals or an indulgent homemade treat.
Ingredients
- Coconut - 1 cup
- Sugar - 2 cup
- Milk - 1/2 cup
- Water - 1 cup
- Butter - 1/4 tsp
- Cardamom powder - 1/4 tsp
- Ghee, for greasing
Instructions
- 1Grate the coconut so you have 1 cup, then set it aside while you assemble the other ingredients.
- 2Combine the coconut and 1/2 cup milk in a heavy-bottomed pan and cook, stirring, until bubbles appear.
- 3Continue cooking, stirring continuously, for 10-12 minutes so the mixture reduces and begins to thicken.
- 4Meanwhile, in a separate saucepan, boil 2 cup sugar in 1 cup water to make a clear syrup.
- 5Pour the hot sugar syrup into the coconut mixture, stirring gently and continuously so the sweet liquid incorporates evenly.
- 6Add 1/4 tsp butter and keep stirring until a soft lump forms and the mixture begins to come together.
- 7Stir in 1/4 tsp cardamom powder to add fragrance and flavor.
- 8Transfer the mixture to a plate greased with ghee and spread it evenly with the back of a spoon, pressing lightly to level it.
- 9Allow the burfi to cool, then cut into squares or diamonds with a sharp knife.
- 10Store the cooled pieces in an airtight container.
- 11Optional: serve the burfi with a cup of chai for a classic pairing.
