Ingredients
- All-purpose flour or maida - 1 cup
- Banana (nenthrapazham), medium ripe - 2 whole
- Curd - 1 tbsp
- Sugar - 4 tbsp
- Turmeric powder - 1/4 tsp
- Salt - 1 pinch
- Water
- Coconut oil
- Corn flakes
- Vegetable oil
Instructions
- 1Combine the all-purpose flour, turmeric powder, sugar, curd and a pinch of salt in a bowl, then add enough water to make a thick batter that clings to the banana; mix until smooth and set the batter aside for 10 minutes.
- 2Peel the bananas and cut each one lengthwise; keeping the pieces roughly even will help them cook consistently.
- 3Crush the corn flakes lightly in a bowl so they will stick to the batter and form a crunchy coating.
- 4Heat enough coconut oil in a deep pan for deep frying until hot and shimmering, taking care not to let it smoke.
- 5Dip each banana piece into the batter to coat completely, then press it into the crushed corn flakes so it is well covered on all sides.
- 6Carefully lower the coated banana pieces into the hot oil and deep fry until both sides are done, turning once so they brown evenly and become crisp.
- 7Remove the fritters with a slotted spoon and drain them on paper towels so they stay crunchy; serve warm as a tea-time snack for kids and adults.
- 8Optional: serve with a dusting of powdered sugar or a cup of hot tea for a classic pairing. (Optional)
