Crispy Indian-Style Fish Fry

A simple, bold-flavored fish fry with a bright spice paste and shallots that crisps up beautifully in hot oil. Ready in under an hour, it makes a quick weeknight supper or a tasty appetizer.

Ingredients
- Fish - 1/2 kg
- Turmeric powder - 1 tsp
- Chili powder - 1 1/2 tsp
- Ginger-garlic paste - 1 tbsp
- Shallots - 5 whole
- Pepper powder - 1/4 tsp
- Salt, to taste
- Oil
Instructions
- 1Combine turmeric powder, chili powder, ginger-garlic paste, shallots, pepper powder and salt in a blender and grind to a smooth, fine paste so the shallots are fully incorporated and the spices smell fragrant.
- 2Pat the fish pieces dry with paper towels, then rub the spice paste evenly over each piece so they are well coated.
- 3Transfer the coated fish to a dish, cover, and marinate in the refrigerator for 30 mins to let the flavors penetrate.
- 4Pour enough oil into a deep pan for frying and heat it until it shimmers; test with a small drop of batter to check that the oil is hot enough to sizzle immediately.
- 5Carefully lower the marinated fish into the hot oil and deep fry, turning once, until the crust is golden and the fish is cooked through and crisp on the outside.
- 6Use a slotted spoon to lift the fish out and drain it on a plate lined with paper towels to remove excess oil.
- 7Serve the fish hot, with lemon wedges and a simple salad on the side as an optional garnish. (Optional)

hi praju fish fry looks so yummy. seeing that pics iam getting memories of my home.we wont get sardine here.it looks very nice and u will use pepper powder for frying?
