Kerala Achappam (Rosette Cookies)
A family recipe since November 2009
Achappam are crisp, lacy rosette cookies from Kerala traditionally made at Christmas; they fry up thin, crunchy and lightly sweetened with coconut milk for a delicate, tropical flavor.
Ingredients
- Rice flour or idiyappam flour (not roasted) - 500 g
- Coconut milk - 2 cup
- Sesame seeds - 1 tsp
- Egg - 2 whole
- Sugar - 4 tbsp
- Coconut oil
Instructions
- 1Whisk the eggs and coconut milk together in a large bowl until smooth and evenly combined.
- 2Stir in the rice flour, sesame seeds and sugar until you have a thick batter with the consistency of dosa batter; it should pour slowly but coat the back of a spoon.
- 3Heat enough coconut oil in a deep, heavy pan until it is piping hot and shimmering.
- 4Heat the achappam mould by dipping it briefly into the hot oil, then remove it and let it stay hot for a moment; this helps the batter to cling when you dip it.
- 5Dip the hot mould only 3/4 into the batter so the batter covers the mould but does not overflow, then quickly lower the mould into the oil and hold it there; leave the mould in the oil for 1 minute so the batter sets onto the mould.
- 6After the batter has set, lower the mould fully into the oil and the achappam will release; usually it takes 2-3 seconds to get cooked enough to slide off, so give the mould a mild tap to separate the appam.
- 7Fry the achappam on both sides until light brown and crisp, then transfer them to paper towels to drain any excess oil.
- 8Repeat the dipping and frying with the remaining batter, reheating the mould in the oil between batches as needed, and then store the cooled achappam in an airtight container.

wat should we do when the achappam does not come out of the mould pls reply as early as possible
- prajushaSeptember 14, 2013
hi bijitha, The achappam mould should be dipped in hot oil before dipping in the batter.otherwise the achappam won't come out of the mould.
