Kovakka Upperi (Tindora Stir-Fry)

A simple, tangy South Indian-style tindora stir-fry that comes together quickly and pairs perfectly with steamed rice. Bright spices and a light simmer bring out the tender crunch of kovakka.

Ingredients
- Tindora (kovakka) - 250 g
- Onion - 1 whole
- Mustard seeds - 1/4 tsp
- Dry red chiles - 2 whole
- Turmeric powder - 1/4 tsp
- Cooking oil - 2 tbsp
- Salt, to taste
- Water
Instructions
- 1Wash the tindora and slice each pod lengthwise into thin strips so they cook evenly.
- 2Heat 2 tbsp cooking oil in a pan until it shimmers and begins to move freely across the surface.
- 3Add 1/4 tsp mustard seeds and 2 whole dry red chiles to the hot oil and let the mustard seeds splutter and become aromatic.
- 4Add 1 whole chopped onion and fry, stirring occasionally, until the onion is softened and translucent and gives off a sweet aroma.
- 5Add the tindora and 1/4 tsp turmeric powder, season with salt to taste, and pour in sufficient water to help the tindora cook; cover and simmer until the tindora is tender and the flavors have melded.
- 6Uncover and cook briefly if there is excess water so the oil rises slightly and the dish has a glossy finish.
- 7Serve hot with rice.
