Horse Gram Chammanthi (Muthira Chammanthi)

A nutty, protein-rich South Indian chutney made from toasted horse gram and coconut; bright, earthy, and perfect alongside rice or a warm bowl of porridge.

Ingredients
- Horse gram - 2 tbsp
- Dry red chilies - 6 whole
- Urad dal (uzhunnu parippu) - 1 tsp
- Garlic - 2 clove
- Mustard seeds - 1/2 tsp
- Tamarind - 1 whole
- Curry leaves
- Coconut - 1 cup
- Salt to taste
Instructions
- 1Heat a dry pan over low flame and dry-roast the horse gram, stirring frequently until the grains turn brown and smell nutty; take care not to let them burn.
- 2Add the dry red chilies, urad dal and mustard seeds to the same pan and dry-roast them briefly until the spices become fragrant and slightly darker.
- 3Remove the pan from the heat and let the roasted ingredients cool for a little while so they grind more easily.
- 4Place the roasted mix in a grinder with grated coconut, the small piece of tamarind, curry leaves and salt; grind while adding a little water until the chammanthi is thick, not watery.
- 5Spoon the chammanthi into a serving bowl and enjoy it with rice or porridge. Optional: drizzle a little coconut oil over the chammanthi for extra aroma.
