Classic Pav Bhaji
A family recipe since May 2007
A comforting, buttery Mumbai street-food favorite: mashed mixed vegetables cooked with pav bhaji masala and finished with a knob of butter. Serve it steaming hot with toasted pav for a satisfying meal.

Ingredients
- Onion - 1 whole
- Ginger-garlic paste - 1 tbsp
- Tomato - 2 whole
- Kashmiri chili powder - 1 tsp
- Pav bhaji masala - 1 tsp
- Turmeric powder - 1/4 tsp
- Mixed vegetables (potato, green peas, cauliflower, red and green capsicum) - 1 cup
- Vegetable oil - 2 tbsp
- Butter - 2 tbsp
- Salt to taste
- Coriander leaves, for garnish
- Pav bread or buns, for serving
Instructions
- 1Place the mixed vegetables in a large pot, cover with water, and boil until very tender; drain and set aside.
- 2Heat the oil in a wide pan over medium heat, then add the ginger-garlic paste and onion and sauté until the onion is light brown and fragrant.
- 3Add the tomatoes, turmeric powder, pav bhaji masala and Kashmiri chili powder, then fry the mixture for 2-3 minutes until the tomatoes break down and the spices smell toasted.
- 4Stir in the boiled vegetables and salt, then cook and stir for 2-3 minutes so the flavors marry; mash the vegetables in the pan to a coarse, slightly chunky texture with a potato masher or the back of a spoon.
- 5Stir the butter into the bhaji until it melts and gives the mixture a glossy finish, taste and adjust seasoning, then transfer to a serving bowl and sprinkle with coriander leaves.
- 6Serve the bhaji piping hot with toasted pav buns and plenty of butter on the side.
- 7Optional: serve with a squeeze of lemon and extra butter for richness, if you like.
