Spicy Shallot Mushroom Curry

A family recipe since July 2007

A quick, flavorful mushroom curry brightened by shallot and dried red chile paste. Ready in under an hour, it makes a cozy weeknight main served with warm chapati.

Ingredients

  • Mushrooms - 500 g
  • Shallots - 12 whole
  • Dried red chiles - 6 whole
  • Turmeric powder - 1/4 tsp
  • Mustard seeds - 1/4 tsp
  • Curry leaves
  • Oil for frying
  • Salt to taste

Instructions

  1. 1Grind the dried red chiles with most of the shallots into a fine paste using a blender or mortar; aim for a smooth, spreadable consistency so the flavors cling to the mushrooms.
  2. 2Toss the mushrooms with the chile-shallot paste, cover, and marinate for 30 mins so the flavors have time to develop.
  3. 3Heat oil in a pan over medium heat, then add the mustard seeds and curry leaves and let them splutter and perfume the oil.
  4. 4Add the remaining shallots, chopped, and sauté until they are soft and fragrant, stirring occasionally so they brown evenly.
  5. 5Add the marinated mushrooms along with the turmeric powder and salt, stir to combine, and cook until the mushrooms release their juices and become tender.
  6. 6Continue cooking until most of the liquid has reduced and the mushrooms are cooked through, stirring occasionally so nothing sticks and the edges get a little color.
  7. 7Serve hot with chapati.
