A family recipe since May 2014

Crisp, crumbly Indian tea cookies made with wheat flour, semolina and ghee. These eggless nan khatai are lightly spiced with cardamom and perfect for an easy, kid-friendly snack.

45 min total18 cookies

Ingredients

  • Wheat flour - 1 1/4 cup
  • Semolina or rava - 1/2 cup
  • Baking powder - 1 pinch
  • Cardamom powder - 1/4 tsp
  • Ghee - 1/2 cup
  • Powdered sugar - 1/2 cup

Instructions

  1. 1Preheat the oven to 150°C and grease a baking tray so it's ready when the cookies are shaped.
  2. 2Combine wheat flour, semolina, baking powder and cardamom powder in a bowl, then sift the dry mixture to remove any lumps and to lighten the texture.
  3. 3In a separate bowl, beat the powdered sugar and ghee together until the mixture becomes light and a little fluffy; this helps the cookies stay tender.
  4. 4Add the sifted dry mix to the ghee and sugar, then knead gently until you have a soft, cohesive dough.
  5. 5Divide the dough into small portions, roll each into a ball and press each ball slightly with the palm of your hand to flatten it into a cookie shape.
  6. 6Arrange the shaped cookies on the prepared tray with a little space between them and bake for about 20-25 minutes until they turn golden brown.
  7. 7Remove the tray from the oven and let the cookies cool on the tray for a few minutes, then transfer them to a wire rack to cool completely so they crisp up.
  8. 8Optional: serve with a cup of masala chai for a classic pairing.
