Ginger Cauliflower (Adrak Gobhi)

A simple, fragrant cauliflower stir-fry finished with ginger and coriander; it pairs beautifully with roti and dal for a comforting weeknight meal.

Ingredients
- Cauliflower - 500 g
- Onion - 1 whole
- Tomato - 1 whole
- Ginger-garlic paste - 1 tbsp
- Turmeric powder - 1/2 tsp
- Red chilli powder - 1 tsp
- Coriander powder - 1 tsp
- Garam masala - 1 tsp
- Cumin seeds - 1 1/2 tsp
- Fennel seeds - 1 tsp
- Ginger - 2 whole
- Coriander leaves - 2 tbsp
- Oil - 2 1/2 tsp
- Water - 1/2 cup
- Salt, to taste
Instructions
- 1Heat the oil in a large pan over medium heat, then add the cumin seeds and fennel seeds and cook, stirring, until the seeds begin to brown, about 30 seconds.
- 2Add the onion and sauté until it turns brown and translucent, then stir in the ginger-garlic paste, turmeric powder, red chilli powder, coriander powder, tomato, salt and 1/4 cup of water.
- 3Saute for one more minute until the oil leaves the masala and the spices smell aromatic.
- 4Toss in the cauliflower florets and cook, stirring occasionally, until they begin to brown and pick up some color.
- 5Pour in the remaining water, cover the pan, and cook until the cauliflower florets are tender when pierced with a fork.
- 6Add the garam masala, the ginger cut into strips, and the coriander leaves; mix well and continue to cook until the masala clings to the cauliflower and is dry.
- 7Serve the dish hot with roti and tadka dal for a comforting meal.
- 8Optional: finish with a squeeze of lemon and a few extra coriander leaves for brightness.
