Stir-Fried Okra with Ginger and Cumin
A family recipe since October 2011
A bright, simple stir-fry that keeps okra crisp and flavorful with warm cumin and fresh ginger. Ready in about 25 minutes, it makes a perfect everyday side for rice or roti.

Ingredients
- Okra - 300 g
- Vegetable oil - 2 tbsp
- Onion - 1 whole
- Garlic - 2 clove
- Ginger - 1 tbsp
- Cumin seeds - 1 tsp
- Turmeric powder - 1/2 tsp
- Red chili powder - 1/2 tsp
- Lemon juice - 1 tbsp
- Salt, to taste
- Fresh coriander leaves, for garnish
Instructions
- 1Rinse the okra and pat it completely dry with a kitchen towel to reduce sliminess, then trim the stem ends and slice into 1/2-inch pieces.
- 2Peel and thinly slice the onion, peel and mince the garlic, and grate the ginger.
- 3Heat the oil in a large skillet over medium heat until it shimmers.
- 4Add the cumin seeds to the hot oil and let them sizzle for a few seconds until fragrant.
- 5Add the sliced onion and sauté for 5 minutes, stirring occasionally, until the onion is soft and translucent.
- 6Stir in the minced garlic and grated ginger and cook for 1 minute until aromatic.
- 7Sprinkle the turmeric and red chili powder into the pan and cook for 30 seconds to bloom the spices.
- 8Add the sliced okra and salt to the skillet and stir to combine so each piece is coated with the spices and oil.
- 9Cook the okra, stirring occasionally, for 8 minutes until it is tender and the edges are lightly browned.
- 10Remove from the heat, stir in the lemon juice, and transfer to a serving bowl; garnish with fresh coriander leaves.
