A family recipe since August 2009

Crispy golden rolls filled with a warmly spiced potato mixture, perfect as a snack or appetizer. They’re easy to make with basic pantry ingredients and ready in under an hour.

35 min total3 servings

Ingredients

  • Bread - 6 slice
  • Potato - 5 whole
  • Shallot - 4 whole
  • Fresh coriander leaves - 1 tbsp
  • Garlic - 4 clove
  • Green chili - 4 whole
  • Garam masala - 1/2 tsp
  • Red chili powder - 1 tsp
  • Maida (all-purpose flour) - 2 tbsp
  • Salt to taste
  • Oil for deep frying

Instructions

  1. 1Remove the crusts from the bread slices and set the slices aside so they are ready for filling.
  2. 2Boil the potatoes until tender, drain well, and mash them until smooth so the filling holds together.
  3. 3Meanwhile, finely chop the shallot, garlic, green chili and coriander leaves so they blend evenly into the potatoes.
  4. 4In a bowl, combine the mashed potatoes with the chopped shallot, garlic, green chili, coriander leaves, garam masala, red chili powder and salt; mix until the flavors are well distributed and taste to adjust seasoning.
  5. 5Dip each bread slice briefly in water, squeeze out the excess moisture between your palms, then place a spoonful of the potato mixture in the center of the slice.
  6. 6Roll the bread tightly around the filling, tucking the ends under as you go; make a smooth paste from the maida and a little water and use it to seal the edges so the rolls stay closed while frying.
  7. 7Heat enough oil in a pan for deep frying, then fry the rolls until they are golden brown on all sides; transfer them to paper towels to drain and cool slightly.
  8. 8Serve the rolls warm with chili sauce, and for an optional twist offer mint chutney as an accompaniment.
