Crispy Broccoli Fritters
A family recipe since May 2013
Light, crunchy broccoli fritters coated in a spiced gram-flour–style batter and deep-fried until golden—an easy, vitamin-rich snack to enjoy with a hot cup of tea.
25 min total3 servings
Ingredients
- Broccoli florets - 1 cup
- Rice flour - 1 tbsp
- Wheat flour - 1 cup
- Red chili powder - 1 tsp
- Baking soda - 1 pinch
- Water
- Salt
- Oil
Instructions
- 1Trim the broccoli and cut into individual florets so they cook evenly.
- 2In a large bowl, combine the wheat flour, rice flour, red chili powder, baking soda, and a pinch of salt.
- 3Slowly add water while whisking until the batter becomes thick and smooth, similar to dosa batter; taste and add more red chili powder if you like extra heat.
- 4Heat oil in a deep frying pan until shimmering, then dip each broccoli floret into the batter to coat it completely.
- 5Carefully lower the coated florets into the hot oil in batches and deep-fry until the fritters are crisp and golden, turning as needed so they brown evenly.
- 6Lift the fritters with a slotted spoon and drain on paper towels to remove excess oil.
- 7Serve the fritters hot with tomato sauce and a cup of hot tea as an evening snack (optional).
