35 min total8 scones
Ingredients
- All-purpose flour or self-raising flour - 2 cup
- Superfine sugar - 1 tbsp
- Butter - 1/3 cup
- Glazed cherries - 3 tbsp
- Golden raisins - 3 tbsp
- Egg - 1 whole
- Milk - 1/4 cup
- Salt - 1 pinch
Instructions
- 1Preheat the oven to 220°C/425°F and position a rack in the center; have a baking tray ready and lightly greased or lined.
- 2Sieve the flour, superfine sugar and salt into a large mixing bowl to remove any lumps and combine the dry ingredients.
- 3Rub the cold butter into the dry mix with your fingertips until the mixture looks like coarse breadcrumbs, working quickly so the butter stays cold.
- 4Chop the glazed cherries if needed, then stir them and the golden raisins into the breadcrumb mixture so they are evenly distributed.
- 5Beat the egg in a small bowl, add it to the mixture and stir to begin bringing the dough together.
- 6Measure out and reserve 1 tbsp of the milk for glazing; add the remaining milk to the bowl and mix until a soft dough forms.
- 7Turn the dough onto a lightly floured surface, roll it out to a thickness of 2 cm and cut out 8 scones using a 2-inch cutter.
- 8Lightly grease the baking tray if you did not already, arrange the 8 scones on the tray and brush the tops with the reserved milk.
- 9Bake in the preheated oven at 220°C/425°F for 10 minutes until the scones are golden brown.
- 10Transfer the scones to a wire rack to cool slightly, then split and butter before serving; optionally serve with clotted cream and jam.
