Chicken Kali Mirch (Black Pepper Chicken)

A bold, pepper-forward chicken curry finished with a silky cashew-onion paste for body and richness. Serve it with roti or naan for a comforting, spice-forward meal.

Ingredients
- Chicken - 500 g
- Onion - 2 whole
- Garlic paste - 1 tbsp
- Ginger - 1 tbsp
- Tomato - 2 whole
- Red chili powder - 2 tsp
- Turmeric powder - 1/4 tsp
- Coriander powder - 2 tsp
- Black pepper powder - 2 tsp
- Garam masala powder - 1/2 tsp
- Couscous - 1 tsp
- Cashew nuts - 6 whole
- Coriander leaves - 4 tbsp
- Oil - 4 tbsp
- Salt
Instructions
- 1Soak the cashew nuts in warm water.
- 2In a pan, boil the couscous and the chopped onion in 1/2 cup of water for 3-4 minutes, then remove from heat.
- 3Grind the soaked cashew nuts together with the onion mixture to a fine paste and set aside.
- 4Grind the coriander leaves, the chopped tomatoes, and the black pepper powder to a smooth paste.
- 5Heat oil in a kadai, add the ginger and garlic paste and cook until it is light brown, then add the red chili powder, the turmeric powder, and the coriander powder.
- 6When the raw smell disappears, add the chicken pieces and mix well, add 1/4 cup of water, cover, and cook for 5 minutes.
- 7Once the chicken is cooked through, stir in the cashew-and-onion paste and the garam masala powder, mix well, and cook on low flame for another 5 minutes, then remove from heat.
- 8Heat 2 tbsp oil in another pan, add the tomato-and-coriander-pepper paste and cook until the oil separates, then pour this into the chicken and stir to combine.
- 9Garnish with the coriander leaves.
- 10Serve with roti or naan, if you like.
