Moringa Leaf and Egg Thoran
A family recipe since May 2007
A quick Kerala-style thoran of tender moringa (drumstick) leaves tossed with scrambled eggs and warm spices. It’s a bright, savory side that comes together simply and pairs beautifully with rice or rotis.
Ingredients
- Drumstick leaves - 1 cup
- Egg - 2 whole
- Turmeric powder - 1/4 tsp
- Chili powder - 1 1/2 tsp
- Pepper powder - 1/4 tsp
- Tomato - 1 whole
- Onion - 1 cup
- Garlic - 2 clove
- Mustard seeds - 1/4 tsp
- Oil - 3 tbsp
- Salt to taste
- Curry leaves
Instructions
- 1Prepare the produce: chop the onion and tomato and mince the garlic; remove any coarse stems from the drumstick leaves so they are tender to eat.
- 2Heat the oil in a pan over medium heat and add the mustard seeds. Let them splutter and begin to pop so they release their aroma.
- 3Add the chopped onion and the drumstick leaves to the pan and sauté for 4 minutes, until the onion softens and the leaves have wilted.
- 4Stir in the turmeric powder, chili powder, and pepper powder, and continue to cook, stirring, for 2 minutes so the spices bloom and coat the vegetables.
- 5Add the chopped tomato and the garlic to the pan and cook until the tomato breaks down and the mixture is well cooked and fragrant.
- 6Crack the eggs into the pan, season with salt to taste, and scramble them into the vegetable mixture until the eggs are just set and evenly distributed.
- 7Taste and adjust the seasoning, then remove from the heat and garnish with curry leaves before serving. Optional: serve with steamed rice or as a side to a curry.
