Egg Malai Curry
A family recipe since May 2009
Silky, lightly spiced egg curry made with a creamy onion-ginger paste and fragrant garam masala—ready in under 30 minutes for a comforting meal with chapati or rice.

Ingredients
- Eggs - 5 whole
- Milk - 1/2 cup
- Green chilies - 3 whole
- Onions - 2 whole
- Ginger - 1 tbsp
- Garam masala - 1/4 tsp
- Ghee - 2 tbsp
- Salt, to taste
- Curry leaves
Instructions
- 1Place the eggs in a saucepan and cover with cold water; bring to a boil, cook until the yolks are firm, then drain, cool briefly, and cut each egg in half.
- 2Roughly chop the onions, green chilies and ginger, then blend them into a smooth paste.
- 3Heat the ghee in a pan over medium heat, add the onion-ginger-chili paste and fry until it turns golden and fragrant.
- 4Gently add the halved eggs to the pan and fry for a few minutes so they absorb the spiced paste and warm through.
- 5Pour in the milk, add salt to taste, bring the mixture to a simmer and cook until bubbles form.
- 6Stir in the chopped curry leaves and continue cooking until the gravy thickens to a silky consistency.
- 7Sprinkle a little garam masala over the curry and give it a quick stir to distribute the aroma.
- 8Serve the egg malai hot with chapati.
- 9Optional: serve with steamed rice for a heartier meal.
