Green Dry Masala Chicken

A family recipe since June 2012

A vibrant, aromatic dry chicken masala packed with fresh herbs and warm spices; quick to make and perfect with rice or rotis for a simple weeknight meal.

Ingredients

  • Chicken - 250 g
  • Onion - 2 whole
  • Coriander leaves - 3 tbsp
  • Mint leaves - 1 tbsp
  • Curry leaves - 1 tbsp
  • Green chilies - 6 whole
  • Green peppercorns - 4 whole
  • Ginger - 1 tbsp
  • Garlic - 8 clove
  • Fennel seeds - 1/4 tsp
  • Pepper powder - 1 tsp
  • Turmeric powder - 1/2 tsp
  • Salt to taste
  • Coconut oil

Instructions

  1. 1Make the green paste by grinding the coriander leaves, mint leaves, curry leaves, green chilies, green peppercorns, ginger, garlic, and fennel seeds to a fine paste; add a little water if the grinder needs it.
  2. 2Heat the coconut oil in a wide pan over medium heat until it shimmers and smells fragrant.
  3. 3Add the onions and sauté until they are light brown and soft, stirring occasionally so they brown evenly.
  4. 4Add the chicken pieces, turmeric powder, and salt, toss everything together, then cover and cook until the chicken is done.
  5. 5Stir in the green masala paste and the pepper powder, mixing well; continue to cook and stir until the mixture is dry and the flavors have melded.
  6. 6Serve hot with rice or roti. Optional: garnish with a handful of chopped coriander leaves or a squeeze of lemon for brightness.
