Inji Thayir (Ginger Yogurt)
A family recipe since February 2009
A bright, cooling South Indian side made from ginger, coconut and thick sour curd. It adds a fragrant, tangy lift to plain rice and pairs beautifully with a spicy pickle.
Ingredients
- Ginger - 50 g
- Thick sour curd - 1 cup
- Green chili - 2 whole
- Coconut - 1/2 cup
Instructions
- 1Peel and grate the ginger and grate the coconut; roughly chop the green chilies so they grind more evenly.
- 2Place the grated ginger, chopped green chilies and grated coconut in a blender or mortar and grind to a smooth paste, stopping to scrape down the sides as needed.
- 3Transfer the paste to a bowl and whisk in the thick sour curd until the mixture is smooth and well combined; taste and adjust the texture if needed by stirring in a little water.
- 4Serve the inji thayir with plain rice and a spicy pickle.
