Classic Israeli Salad
A family recipe since June 2011
Bright, crunchy and utterly fresh, this classic Israeli salad comes together in minutes and highlights ripe vegetables and herbs. It uses olive oil and lime instead of heavy dressings for a light, healthy side or starter.
10 min total4 servings
Ingredients
- Cucumber - 1 whole
- Tomato - 2 whole
- Onion - 2 whole
- Capsicum - 1 whole
- Parsley - 1 tbsp
- Olive oil - 2 tbsp
- Lime juice - 2 tbsp
- Pepper powder - 1/2 tsp
- Salt to taste
Instructions
- 1Wash and dry the cucumber, tomatoes, capsicum, onion and parsley, then cut the cucumber, tomatoes, capsicum and onion into small dice and finely chop the parsley so it blends into the salad.
- 2Place the diced vegetables and chopped parsley in a large bowl and drizzle the olive oil over them, then use a spoon to gently combine so the oil coats everything evenly.
- 3Add the lime juice, salt to taste and pepper powder, and toss the salad until the ingredients are evenly seasoned and glossy.
- 4Let the salad rest for a few minutes so the flavors meld, then taste and adjust seasoning if needed.
- 5Optional: serve with warm pita or spoon the salad over mixed greens. (Optional)
