Raw Mango and Shallot Chutney
A family recipe since June 2008
Bright and tangy, this raw mango and shallot chutney combines sour green mango with sweet shallots and a touch of dried red chilies for a zippy condiment that lifts plain rice or kanji.
Ingredients
- Raw mango - 1 whole
- Shallots - 8 whole
- Dried red chilies - 3 whole
- Salt to taste
- Coconut oil - 1 tsp
Instructions
- 1Peel the raw mango, remove the seed, and cut the flesh into small pieces so it grinds easily.
- 2Peel the shallots and trim the ends; if they are large, halve them to help the blade catch.
- 3Add the mango pieces, shallots, dried red chilies and salt to a blender or mortar and pestle and grind everything into a paste, stopping to scrape down the sides as needed.
- 4Stir the coconut oil into the paste until it is evenly incorporated and the chutney looks glossy and cohesive.
- 5Serve the chutney with rice or kanji as a bright, tangy accompaniment.
