Mooli Subzi (Radish Curry)
A family recipe since April 2008
A simple, homely radish curry that turns ordinary mooli into a fragrant, comforting side. Bright spices and ginger-chilli paste make this an easy favorite to serve with roti or paratha.
30 min total4 servings
Ingredients
- Large white radish - 1 whole
- Turmeric powder - 1/2 tsp
- Cumin seeds - 1/2 tsp
- Asafoetida - 1/4 tsp
- Ginger paste - 1 tbsp
- Green chilli paste - 1 tbsp
- Red chilli powder - 1 tsp
- Coriander powder - 2 tsp
- Cooking oil - 3 tbsp
- Salt, to taste
Instructions
- 1Peel the radish and cut it into cubes, then place the cubes in a pot, add enough water to cover and 1/2 tsp turmeric powder, and boil for 7 to 8 minutes until just tender; drain and set aside.
- 2Heat 3 tbsp cooking oil in a pan over medium heat, add 1/2 tsp cumin seeds and 1/4 tsp asafoetida and wait until the seeds begin to sizzle and release their aroma.
- 3Stir in 1 tbsp ginger paste and 1 tbsp green chilli paste, and sauté for a few minutes until the mixture is fragrant and the raw edge has mellowed.
- 4Add the cooked radish to the pan along with 1 tsp red chilli powder, 2 tsp coriander powder and salt to taste; gently stir to coat the radish with the spices.
- 5Cook the mixture for 8 to 10 minutes, stirring occasionally, until the radish absorbs the flavors and any excess moisture evaporates; taste and adjust seasoning if needed.
- 6Serve the mooli subzi warm with chapati or paratha. Optional: garnish with chopped fresh coriander and a squeeze of lemon for brightness.
