Quick Okra and Egg Scramble

A simple, speedy side that pairs perfectly with steamed rice — tender okra cooked with warming spices and scrambled eggs for a comforting, textural dish you can make in about 20 minutes.

Ingredients
- Okra (vendakka) - 8 whole
- Egg - 2 whole
- Onion - 1 whole
- Green chili - 2 whole
- Ginger - 1/2 piece
- Red chili powder - 1 tsp
- Turmeric powder - 1/4 tsp
- Pepper powder - 1/2 tsp
- Meat masala powder - 1 tsp
- Curry leaves
- Salt
- Oil - 3 tbsp
Instructions
- 1Trim the stem ends of the okra, wash well, pat dry to reduce sliminess, then slice lengthwise and cut into thin slices.
- 2Beat the eggs in a small bowl until smooth and set aside; season with salt to taste if desired.
- 3Heat the oil in a pan over medium heat, then sauté the onion, ginger and green chili until the onion softens and becomes translucent.
- 4Add the sliced okra, red chili powder, turmeric powder, pepper powder, meat masala powder and salt; stir to coat the okra in the spices, cover, and cook until the okra is tender.
- 5Uncover the pan, pour in the beaten eggs, and scramble everything together until the eggs are cooked through and the mixture is dry, then remove from the heat.
- 6Garnish with curry leaves and serve hot with steamed rice as a flavorful side.
