Penne Napolitana
A family recipe since November 2009
Bright plum-tomato Napolitana sauce tossed with penne and crisp mixed vegetables makes a simple, comforting pasta that comes together fast for weeknights or casual dinners.

Ingredients
- Penne - 1 1/2 cup
- Olive oil - 4 tbsp
- Garlic - 2 tbsp
- Pepper powder - 1/2 tsp
- Mixed vegetables (capsicum, green peas, beans, carrot) - 1 cup
- Napolitana sauce - 2 cup
- Salt, to taste
Instructions
- 1Bring a large pot of salted water to a boil, add 1 1/2 cup penne, and cook for 10 minutes.
- 2Drain the pasta, return it to the pot, toss with 1 tbsp olive oil to prevent sticking, and keep it warm while you make the sauce.
- 3Heat 3 tbsp olive oil in a wide skillet over medium heat.
- 4Peel and finely chop the garlic and the vegetables; add 2 tbsp garlic and 1/2 tsp pepper powder to the hot oil and sauté until the garlic is fragrant.
- 5Add 1 cup mixed vegetables to the skillet and stir well until the vegetables are just tender; if you prefer, you can substitute chopped chicken pieces for the vegetables.
- 6Pour in 2 cup Napolitana sauce and simmer until the sauce is warmed through and the flavors meld.
- 7Pour the sauce over the cooked pasta and toss gently to coat every piece with sauce.
- 8Serve warm.
- 9Optional: finish with grated Parmesan or torn fresh basil for garnish.

I love napolitana sauce. Whenever I will go any resturant first I order choice pasta in napolitana sauces.
