Potato Sagu Masala

A comforting, lightly spiced potato curry that comes together quickly and pairs perfectly with Indian breads. Warm spices and curry leaves lift simple mashed potatoes into a fragrant, homely sagu.

Ingredients
- Potato - 3 whole
- Green chili - 2 whole
- Onion - 2 whole
- Mustard seeds - 1 tsp
- Bengal gram daal (urad dal) - 1 tsp
- Potato sagu masala - 3 tsp
- Lemon juice - 1/2 tsp
- Curry leaves, as required
- Ginger - 1/2 piece
- Salt, to taste
- Cooking oil
- Water, as required
Instructions
- 1Cook the potatoes until they are tender through; peel them while warm, mash them until smooth, and set aside so they are ready to add to the pan.
- 2Heat the cooking oil in a pan until hot, then add the mustard seeds and Bengal gram daal; let the mustard seeds splutter and the dal turn golden and fragrant.
- 3Add the onion, green chilies and ginger to the pan and sauté until the onion is soft and golden brown, watching for a sweet, caramelized aroma.
- 4Stir in the potato sagu masala, then pour in the lemon juice and add salt; cook the spices for a moment so they bloom and coat the onions.
- 5Add the mashed potatoes and a little water to reach your desired consistency, mix thoroughly, and simmer for about 5 minutes so the flavors meld.
- 6Tuck in the curry leaves at the end and give everything one final stir to release their aroma.
- 7Serve hot with your favorite Indian bread.
- 8Optional: offer a dollop of plain yogurt or a wedge of lemon on the side for brightness.
