Drumstick Leaves and Red Cow Pea Thoran
A family recipe since December 2007
A fragrant Kerala-style thoran that combines tender drumstick leaves with earthy red cow peas and fresh coconut for a simple, comforting side dish.
Ingredients
- Drumstick leaves - 4 cup
- Red cow peas - 1/2 cup
- Grated coconut - 1/2 cup
- Shallots - 3 whole
- Green chilies - 2 whole
- Curry leaves
- Turmeric powder - 1 pinch
- Mustard seeds - 1/4 tsp
- Oil
Instructions
- 1Rinse 1/2 cup red cow peas and soak them overnight in plenty of water so they swell and soften.
- 2The next day, drain the peas and boil them with a little salt and the turmeric powder until they are tender.
- 3While the peas cook, pulse 1/2 cup grated coconut, 2 whole green chilies, 3 whole shallots, and a few curry leaves in a small grinder to form a coarse paste.
- 4Heat oil in a wide pan, add 1/4 tsp mustard seeds and let them splutter so the oil is fragrant.
- 5Add the drumstick leaves and sauté for 5 minutes, until they wilt and brighten in color.
- 6Stir in the boiled red cow peas and the coconut paste, then cook, stirring, until the mixture is dry and aromatic; adjust salt to taste.
- 7Serve warm with steamed rice; optionally finish with a squeeze of lemon.
